I use Notes on my iPhone extensively to keep track of all sorts of things. Is there some way that I can edit them on my PC and copy them back to the phone, like via a sync or something?

If you are using iCloud, you can sync them through there. Check out the Apple support help: http://www.apple.com/support/icloud/mail-notes/

The new iOS 6 will have even more support for syncing notes.
