It looks like the installer didn't succeed on my device the first time. There's an installation .CAB file located at \Program Files\AT&T\Xpress Mail Smartphone Client\XpressMailSPWM5Setup.cab on my phone. I navigated to the folder using File Explorer (Start -> Applications -> File Explorer, then press the "Up" softkey, then navigate to "Program Files" and so on), then selected the .CAB file. The installer prompted me to remove the current version of Xpress Mail, which I let it do. It then performed the installation and told me it needed to restart the phone, which I let it do as well. After the restart, everything seems to be in working order.
I found that if you don't have the .CAB file, it can be downloaded from http://cdl0.7sys.net/att/production/spwm6/samsungi
I didn't take registry snapshots before and after the installation, but it looks like some keys may have changed in HKEY_CURRENT_USER\Software\AT&T\Xpress Mail Smartphone Client. I noticed that the keys "registered" and "Upgraded" are now set to "1", whereas (I think) before the "Upgraded" key was set to "0". I'm not sure if simply changing those keys would fix the issue, so if re-installing the .CAB file doesn't work, you could try the registry. FYI, I used the program "Mobile Registry Editor" to edit the registry of the phone using my PC.
[EDIT]: I did all this on a Samsung Blackjack II running Windows Mobile 6.1.

No problem, I hope it worked for you. =) Those "Upgrade" messages were getting REALLY annoying.
