The CAT3 should be fine if you have them install the Gateway in your office, but if you want it somewhere else I would run CAT5e minimum from the NID to your desired location. Leave a foot or two at each end and let the installer terminate.

Run a cat5 or cat6. More twists per inch helping in reducing interferrence causing line noise. Installers should NOT be putting on cat3 anyways.

Since the underground cable from the VRAD to your home is Cat3 at best (many wiring bundles in many neighborhoods aren't Cat-anything) and it's usually anywhere from 1000-2000 feet, having the last 75 feet of home run from your NID installed as Cat5 or 6 is usually not going to make any difference as far as the signal quality. The only exception would be if you have a lot of RFI or EMI interference within your home, in which case the Cat5/6 wiring probably won't help much anyways.
