Our receiver recently rebooted and ran self correction diagnostics where it wiped the hard drive storage, thereby deleting all of our old recorded shows. Is there a way to save old recordings off to another storage device that can be connected to teh receiver or router to avoid losing them when the device goes through a reboot (for example upon a powere blip)?

You can connect a DVD recorder to your U-verse receiver to archive recordings to DVD's subject to Digital Rights Management (DRM) restrictions.

This would be very helpful. Where would one find instructions on how to do this? Does it have to be a DVD recorder, or could it be an external hard drive, or some other media?
More information, please.

There is no way to transfer the content directly. What TG is proposing is that you have some sort of video recorder (DVD recorder, another type of DVR, Media enabled PC, etc.) that can take the video output generated by your DVR when you hit play.
"Subject to DRM" means that some interfaces (notably HDMI) won't let you record copy-protected content from the DVR.

After the tremendous success of the VCR, there never was a "new technology" replacement. The content providers were against it and the TIVO people sewed up any cracks of daylight. Chalk up another example of the fear of illegal use blocking legitimate use without slowing down the illegal use.
So, the only devices available are computers. These are also hampered - No HDMI connections & DRM blocking on some shows.
Check out Elgato & Hauppage as gold standard hardware & software on a single computer, Slingbox & Vulkano give access to any computer. These products & Microsoft Mediaroom provide have software for computer control of the STB via an IR blaster, So, you can download during off hours.
Just saw this device for HDMI input - http://www.blackmagicdesign.com/products/intensity
Do not forget to provide a file back-up for the computer or you might loose your library (Can you imagine that?)

To record full HD video/audio from the Uverse box without DRM issues, you will need to use the component video out and digital audio out. The Black Magic devices do not have digital audio in other than over the HDMI connection.
