First, you can call her only if she has a contract phone. GoPhones don't work in China.
If she has a quick messaging phone or a smartphone, data roaming can be very expensive. So be aware.
For you to call her, you would be charged $1.09 per minute plus airtime. If you get the International Long Distance package for $10, you get a much better deal of 250 minutes long distance. If you go over 250 minutes, you will be charged at the standard rate of $1.09 per minute plus airtime.
With the $50 monthly plan, you get unlimited texting. With the $25 monthly plan, you get charged $0.25 per text message sent and $0.20 per text message received(there's a question on the receive part since it's not clearly written on the rate table). With other plans, you can find out by reading the rate table - just visit the URL in the sticky posts at the top of the Prepaid forum.
